
MACAROON
Originated in Venice in the 13th century.
The Venetians christened the small almond cakes 'macerone' for the Italian 'maccherone', meaning a fine paste. A young French patissier, Paul Desfontaines, while working in Switzerland in a small patisserie in Laussanne, was impressed by a biscuit-based gateau with a ganache filling. On his return to France, Paul adapted the gateau recipe to use individual macaroons instead of the biscuit base, sandwiching them together with a variety of flavored ganaches.
TARRAGON
Aromatic herb known for its distinctive aniselike flavor. Tarragon is widely used in classic French cooking for a variety of dishes including chicken, fish and vegetables, as well as many sauces, the best known being Bearnaise.
CORNICHON
French for "gherkin," cornichons are crisp, tart pickles made from tiny gherkin cucumbers. They're a traditional accompaniment to pates as well as smoked meats and fish.
